Upon the arrival of the cacao beans at our esteemed establishment, they are meticulously subjected to a comprehensive Cleaning & Sorting regimen to eliminate any subpar beans and extraneous matter. We are dedicated to providing nothing short of excellence.
The beans undergo a meticulous Roasting process to extract the exquisite chocolate flavor that is universally recognized. Precision is paramount in roasting, as under-roasting fails to reveal the bean’s full essence, while over-roasting results in a charred taste.
The nibs must then be separated from the husk. The beans are cracked to ensure they are broken down into their individual nibs and husk. Through the concept of husk being lighter than the nibs, Winnowing enables the extraction of pristine nibs from the cracked beans.
The beans are meticulously ground with a blend of natural elements, employing traditional small-batch grinders for a duration of 3 days to craft the chocolate to our preferred smoothness. Conching takes place over a day or two, purging the chocolate of undesirable volatile elements and diminishing its harshness.
The chocolate must undergo a period of solitude for several weeks, in a process known as Ageing, for the elements to acquaint themselves and cultivate a richer taste profile.
Once the chocolate reaches its prime for selling, it must undergo tempering to cultivate the ideal cocoa butter crystal structure, ensuring a refined mouthfeel and exquisite melting attributes.
